According to contract law, there are only 2 persons needed to seal a contract, offeror & Acceptor. But there should be a good reason not to have a witness, e.g. confidentiality.
Otherwise, would suggest to find a witness in order to ensure the contract is valid, to verify there are no one sign the contract under duress, insanity etc.
